Beyoncé taught me many things. Being in love makes you look crazy. You should put a ring on what you like. Surfboard is actually pronounced surfboart. And most importantly, she taught me that watermelon is a drink.
For most of last summer, I serenaded Drunk in Love to myself until I forgot all the lyrics and it boiled down to just saying “I’ve been drinking watermelon” over and over. Inspired, I made watermelon lemonade. It’s the ultimate thirst quencher. I don’t know why it’s taken me this long to make it again!
The best part of this lemonade? It’s so easy to make. It’s almost embarrassing calling this a recipe. There are only two ingredients and they’re named in the title. No added sugar, for you health nuts out there.
The next best part of this lemonade? You can add alcohol. Gin is lovely. Tequila is delicious. Vodka. Limoncello. These are just the ones I have tried. Go wild!
It has been a hot summer this year. How have you been staying cool and hydrated?
- 2 lbs watermelon chunks
- 3 lemons
- Using a blender, food processor, immersion blender, whatever you have, blend the watermelon chunks until smooth.
- Over a bowl or wide mouth pitcher, place a sieve and pour in the watermelon mixture. Allow the watermelon juice to drip through the sieve, stirring with a spoon until you have just watermelon pulp left. Discard that stuff.
- Add the juice of two lemons.
- Transfer to the pitcher or bottle you want to serve it in and garnish with slices of the remaining lemon.
